West Cork Distillery was formed in 2003 by three close friends and today in 2021 they employ more than 80 people! Founders John O'Connell, Ger McCarthy and Denis McCarthy are still very much at the heart of the operation today. We absolutely love the rich toasty notes of the Virgin Oak Cask - mix a double measure with ginger beer, plenty of mint in a tall glass with ice and enjoy some serious refreshment. The Bourbon Cask is a classic single malt Irish whiskey that shows layers of sweet malt, vanilla, butterscotch and a lovely fresh, citrus finish.
